Is it possible to both create a new wiki entry and edit an existing entry? I can't seem to do so.

SharePlus PRO should allow you to edit already existent Wiki pages. If you tap the Wiki's name in the list view you will see the page's details. If you tap the Actions Button you and selec Edit you will be able to edit the page.
Adding Wiki pages is not currently implemented.
