I know it sounds impossible, but still maybe someone have an idea how can I use the XamDataGrid built in filtering UI, including the custom filter editor, but after applying the filter just graying out the filtered out rows instead of hiding... It would be great help not reinventing the wheel and reimplement a filtering UI, just use the built in...

I have been looking into it. In order to achieve the functionality you have mentioned you can set the FilterAction property of the FieldLayoutSettings of the XamDataGrid. When you set it to ReduceOpacity, the filtered out records would be filtered out.
Also you can use the IsFilteredOut property of the DataRecordPresenterCellArea, in order to change the appearance of the filtered out records.
