Can you please clarify when and where you wish to display field header's when the data grid is grouped/ungrouped? You can specify where field headers will appear in various situations in case you need to. The HeaderPlacement settings in the FieldLayoutSettings can help you manipulate the location of the headers.
eg.

The XamDataGrid does not support the removal of individual groupby field headers per record island and/or having them appear once at the top only once. They appear always and cannot be changed.

You may be interested in the XamTreeGrid, but obviously it's not designed with groupby in mind.
