I want to know if it is possible to adjust those styles and/or properties specifically in the AppStylist application. Also, I'm having trouble trying to find an example in the preview canvas so I can easily see it being adjusted..

In general, AppStylist is intended to let you style your entire application. So you typically cannot style a single object (such as a band).
In fact, it is possible to style individual objects, but you can't do it with AppStylist alone, the application has to be set up to do it. What you can do is use the StyleResourceName property on any Appearance object. You set this property to the name of a resource in the style library and the appearance will pick up it's settings from that resource.
Regarding HeaderPlacement, you typically cannot change any properties through AppStylist that might affect the functionality of the application. I'm not sure if HeaderPlacement fits into that category, but it seems like it might, so it's probably not available through AppStyling.
Thank you. I have one more question regarding Background Images. I'm trying to get it to align to the top left but it seems as though I cannot. I don't want it to tile and/or stretch and it seems as though it will only "center" my image..
I have a background image that has a fading effect so it won't take up the entire background area.. but again, I don't want it centered or stretched, etc....
Well, if there is no ImageBackGroundStyle for Upper-left, then there's no property setting that will help you here.
Perhaps you can use Tiled and just increase the size of the image in code. For example, you could use the Resize event of the grid and create a BitMap in code that is the same size as the grid, draw your image onto the upper-left of that image and use that as the background for the grid.
Or, instead of creating an image every time the grid resizes, just create one very large image that will generally be bigger than the screen and so the same thing.
Another option would be to use a DrawFilter and draw the ImageBackground yourself.
