I've attached a sample that shows how you can do this.  Just setting the QuickAccessToolbar's Visibility to Collapsed won't get rid of the space above the ribbon.  The xamRibbon components are kept inside a Grid and this has multiple RowDefinitions.  The top most row has a set height that you need to override in order to remove the space it takes up.

As for the 'default tab' you referred to, this can be removed using the following xaml:
