We use the workflow approval feature on our sharepoint lists. So far I have not been able to open the approval window through the iPad app. Has anybody been successful with this feature?

Approval Workflows, in the way you describe them, are not supported. By this I mean you won't see the approval window in SharePlus.
Workflows are supported when creating or editing an item, for example, triggers a workflow. Interacting with the workflow directly is not implemented.

Do you know if deeper integration with Workflows is in the SharePlus roadmap? It would be very useful to be able to, for example, approve documents through the app.

You can approve/reject documents if the library has content approval by simply tap-holding the document and selecting Approve/Reject.
Approving Workflows are not in the roadmap yet.
