I am using XamScheduleView as Separate DisplayMode and want to remove the gutter where the MoreActivityIndicator would be as I will not have appointments which are overlapping.
The heights of the resources/calendars have been fixed.
Does anyone know how to remove the gutter and make the appointment fill the appointment time on the calendar?

Thank you for contacting Infragistics. Please provide a mockup/screenshot of the area you wish to change since I'm unsure exactly the area you are referring to. You may point out the area from one of the images listed on Schedule page.

It's the area in yellow below which I want to remove, and then have the appointment block extend down to use this space.
Thank you for following up. The XamSchedule has a CalendarDisplayMode property, which I recommend setting this to Separate. This is useful in cases where the majority of the time only one appointment is displayed.
Please visit the Configuring xamScheduleView topic for more details. One additional comment is that we designed this component along with the other calendar views to behave like Microsoft Outlook. While you have more freedom to change certain settings you won't be able to extend appointments to the full length of the parent element out of the box.

You can retemplate the TaskPresenter and other elements within the XamSchedule API by accessing our default styles. We provide the style source to you upon installation here:
C:\Program Files (x86)\Infragistics\201x.x\WPF\DefaultStyles\Schedule
Please refer to the styling points of the XamSchedule for more details. I cannot guarantee you will be able to achieve your requirement nor is this a supported scenario. Therefore this is considered to be a new product idea.
